Love Cake Vegan Chocolate Ganache Icing

We cant get enough of this easy vegan chocolate ganache icing, its so simple and takes just a few minutes to prepare and the best part is, you only need two ingredients!
Our Love Cake chocolate cake mix includes icing, but if you're making a 2 or 3 tiered cake for a special occasion you could add this ganache to the centre. We love adding the ganache on top of our chocolate muffins to create cupcakes! 
Ingredients:
250g Dairy Free Dark Chocolate (chopped) (70% cocoa or higher works best)
250ml Quality Coconut Cream (shake well)
Method:
1) Fill the bottom of a small saucepan with water until it is 1/4 full. Turn the element to a low heat and bring the water to a simmer.
2) Whilst you are waiting for the water to come to a simmer, break the block of chocolate simply with your hands or with a knife, add it to a ceramic or glass mixing bowl that will sit comfortably over the top of the saucepan. This is called a ban marie or double boiler. Add the coconut cream to the bowl. 
3) Place the bowl over simmering water and continuously mix with a rubber spatula until the mixture is smooth and glossy. Don't let the water boil.
4) Take the bowl off the pan and leave the chocolate mixture to cool at room temperature. This process can be sped up by placing the bowl in the fridge to chill and thicken.
5) Once you have a thick ganache it is ready to frost your cake or piped onto your cupcakes.
Tips:
1) Avoid the bottom of the bowl of chocolate touching the simmering water, this could burn your chocolate and leave you with an undesirable grainy ganache.
2) Avoid water splashing into your chocolate, this causes the chocolate to seize and result of your ganache will be lumpy and hard.  
3) For a thinner ganache add more cream until your desired consistency is reached.
