Love Cake Allergen Free Christmas Trifle

We’ve got you covered this Christmas with our easy peasy allergy friendly, GF, DF berry trifle. It’s quick and easy to make, saving you time on Christmas day. We’ve used Love Cake vanilla cupcake mix to create the sponge, Barker’s berry compote for the berry sauce and Aplro’s dairy free custard. We hope you enjoy our delicious allergy alternative to the classic trifle. Merry Christmas!

Equipment Needed:

  • 20cm cake tin
  • 6-8 glass tumblers
  • Skewer
  • Egg beater
  • Baking bowl
  • Cake knife

Ingredients Needed:

  • 1x Love Cake vanilla muffin mix
  • ¼ cup of sherry or liqueur of your choice (optional)
  • 1x Barker’s rhubarb, strawberry and raspberry fruit compote
  • 1x carton of 500ml Alpro Soya Soy Dessert Vanilla Custard Dairy Free
  • 1x 400g can of coconut whipping cream
  • Blueberries, raspberries, strawberries and cherries for decorating

Trifle Method:

  1. Preheat your oven to 180℃ (160℃ fan forced)
  2. Take your Love Cake vanilla muffin mix and refer to the recipe on the back of the box, replacing a muffin tray with your cake tin and baking the cake for 25-30 mins and/or until golden on top
  3. Once the cake is out of the oven, test it is cooked by inserting a skewer in to the centre of the cake - if it comes out dry then the cake is cooked
  4. Take your coconut whipping cream and whip it using your egg beater until you can make soft, billowy peaks
  5. Once your cake is cooled, take your cake knife and carefully slice it in half horizontally, so you have two 20cm wide cakes
  6. Take your tumblers and cut small pieces of the cake (about the width of your tumbler) and pad it down inside the bottom of the glass
  7. (Optional) spoon sherry or liqueur over the sponge
  8. Pour your Barkers compote on top to your desired amount
  9. Pour your Alpro custard on top of the compote. Your trifle should now have a layered effect
  10. Repeat the last four steps, layering cake, followed by compote and then custard
  11. Take your whipped cream and pour on top of the custard
  12. Finish your trifle by decorating it with berries and/or cherries on top of the cream.
