Lemon & Blueberry Loaf

Lemons are everywhere at the moment and are full of flavour. We’ve taken lemons from the garden, blueberries from the freezer and added them to our vanilla muffin mix to make this delicious loaf.
1. Take one vanilla muffin mix and add 1 cup of blueberries (frozen or fresh) and the zest of 1 lemon.
2. Grease a loaf tin and add the mix to the tin. Put the loaf in the oven at 160 degrees fan-bake for 50 minutes.
3. While the loaf is baking, mix together 1 cup of icing sugar with 2 tbsp of lemon juice.
4. Once the loaf is out of the oven and cooled, drizzle the icing over the top and enjoy!
