Halloween Cupcakes

These Halloween cupcakes are an easy treat to bake and are perfect for any trick-or-treaters that come knocking. Kids will love helping you in the kitchen creating these fun and festive creatures. Choose between decadent chocolate bats or sweet vanilla ghosts, or try both! The best part about these spooky cupcakes is that the bases are made from our delicious Love Cake mixes which means they’re allergy friendly. Happy Halloween!

Equipment Needed:

  • Sieve
  • Rubber spatula
  • Electric hand whisk/ stand mixer
  • 9x Black cupcake cases
  • 9x White cupcake cases
  • 1x Star piping tip(2D works well)
  • 1x Medium circular tip
  • 2x Large piping bags
  • Baking paper
  • 2x Microwave-safe bowls
  • 2x Zip-lock sandwich bags
  • Baking tray
  • Baking paper

Chocolate Bat Cupcakes Ingredients;

  • 9x pre-cooked Love Cake chocolate muffins - baked in black cases
  • 100g butter, we use a dairy-free alternative spread - at room temperature
  • 250g icing sugar
  • 50g good quality cocoa powder
  • 50g good quality dark chocolate (at least 50% cocoa solids)- melted and cooled slightly
  • 20ml milk of your choice
  • 2 Tbsp black food colouring

Bat eyes and wings;

  • 20g dark chocolate - melted
  • 15g white chocolate - melted

Method:

  1. Place butter in a bowl and with the electric hand whisk (or stand mixer with paddle attachment) cream until fluffy and light in colour.
  2. Sieve the icing sugar and cocoa powder over the butter and mix until well blended.
  3. Pour in the cooled melted dark chocolate, milk and black food colouring into the butter mixture and mix well. It should form a smooth glossy black buttercream.
  4. Prepare the piping bag with the star (2D) tip at the bottom of the bag and using the rubber spatula fill the piping bag with your buttercream, being careful not to overfill it.
  5. Pipe in a circular motion onto the pre-cooked chocolate muffins starting from the outside and working your way up to form the body of your bat. Ice all 9 muffins and set aside.
  6. Prepare a baking tray with a sheet of baking paper.
  7. In the zip-lock sandwich bag pour your melted dark chocolate and pipe bat wings onto the baking tray. Do the same with the white chocolate to create the whites of the bat’s eyes with a dot of dark chocolate as the pupils. Place in the fridge for 10-15 minutes until chocolate is completely set hard.
  8. Assemble muffins with a wing on each side and 2 eyes. And enjoy!

Vanilla Ghost Cupcake Ingredients;

  • 9x pre-cooked Love Cake Vanilla Muffins - baked in white cases
  • 100g butter,  we use a dairy-free alternative spread - at room temperature
  • 300g icing sugar
  • 40ml milk of choice
  • 2tsp good quality vanilla extract

Ghost eyes and mouths;

  • 15g dark chocolate - melted

Method;

  1. Place butter in a bowl and with the electric hand whisk (or stand mixer with paddle attachment) cream until fluffy and light in colour.
  2. Sieve the icing sugar over the butter.
  3. Add the milk and vanilla extract to the same bowl.
  4. Beat together, you will want the buttercream to be very light in colour with an airy consistency.
  5. Prepare the piping bag with the circular tip at the bottom of the bag and using the rubber spatula fill the piping bag with your buttercream, being careful not to overfill it.
  6. Pipe in a circular motion onto the pre-cooked chocolate muffins starting from the outside and working your way up to form the body of your ghost. Ice all 9 and set aside.
  7. Prepare a baking tray with a sheet of baking paper.
  8. In the zip-lock sandwich bag pour your melted dark chocolate and pipe ghost eyes and mouths onto the baking tray.  Place in the fridge for 10-15 minutes until chocolate is completely set hard.
  9. Assemble cupcakes with a wing on each side and 2 eyes. And enjoy!
