Orange and Date Scones

Who doesn’t love a freshly baked scone? Enjoy on a cozy winter's day or bake them for a morning tea with friends and family this Queens birthday weekend! We can’t get over how simple and delicious these allergy-friendly scones are to make.

Soaking the dates in the juice of the orange will create a beautifully succulent date, filled with citrusy goodness flavour. Serve the scones with freshly whipped cream and jam, or for a vegan or dairy-free option, try some whipped vanilla coconut cream and jam on the side. For a festive twist you could add a sprinkle of cardamom into the mix!

Equipment Needed:

  • Mixing bowl
  • Microwave-safe bowl
  • Zester
  • Rubber spatula
  • Whisk
  • Measuring jug
  • Measuring cups
  • Scales
  • Sieve
  • Baking tray
  • Baking paper

Ingredients:

  • 2 cups Love Cake Pantry Essentials Plain Flour
  • 3 teaspoons Baking Powder
  • ½ cup Raw Sugar
  • ½ tsp Salt
  • ½ cup Coconut Oil (solid)
  • ⅓ cup Dairy Free Milk - we use Rice Milk
  • ½ cup Dates (chopped)
  • Zest of 1 Orange
  • Juice of 1 Orange
  • 2 tablespoons Extra Raw Sugar (Save for later)

Method:

  1. Preheat oven to 200℃ (180℃ fan forced). Line a baking tray with baking paper and set aside.
  2. In a mixing bowl sift in your Love Cake Plain Flour and then add the baking powder, raw sugar and salt.
  3. Add the solid coconut oil to your flour mix and using your hands, rub the coconut oil and flour together to form breadcrumb.
  4. Place the diced dates into a microwave-safe bowl and pour over your orange juice. Microwave for one minute to allow the dates to get super juicy.
  5. Add the dates with the zest plus juice of the orange and rice milk to the flour mixture . Mix with a rubber spatula until you have a soft smooth dough.
  6. Lightly sprinkle your bench with Love Cake Plain Flour and tip out your dough. Shape into a rectangle and cut evenly into 9 or 12 scones. Place scones on the baking tray.
  7. Sprinkle the scones with the extra raw sugar you set aside earlier.
  8. Place in the oven and bake for 12-15 minutes, until solid and slightly golden.
  9. Remove from oven and allow to cool... Although fresh scones straight from the oven are almost too impossible to resist! Suitable for people that are vegan or who have allergies to; eggs, nuts, soy, gluten and dairy.
