Xanthan Gum

Xanthan gum is a natural carbohydrate produced by tiny micro-organisms called Xanthomonas Carmpestris. 

It can be used as a substitute for the gluten present is regular flours by giving volume and structure to breads, pizza bases, pastries and other gluten free baked goods.
Xanthan gum can also be added to salad dressings, gravies, sauces and even ice cream to give a creamy smooth texture.

It is soluble in both hot and cold water but gels and gives better absorption when heated.

Its unique ability to hold particles of food together make it an ideal food stabiliser.
